Chickpea salad

The thing i love about salads is that they can be so colourful and so big! I mean look at that huge portion of beauty! You can have ALL of that without regrets, without stomach aches afterwards or the need to go have a huge lie down.

Ingredients:
Cabbage
Brussel sprouts
Baby spinach
Cooked chickpeas
Parsley
Celery
Lemon
Extra virgin olive oil
Cayenne pepper

Again, just like i always like my salads, simple and quick to make. It’s also a great idea to chop eberything and keep in the fridge in a lunchbox the night before, that way when its lunchtime you wont find ANY excuse to go for those easy microwaveable lunches but all it needs is a squeeze of lemon, a drizzle of olive oil and its ready to be devoured!
