White beans and pumpkin salad

My last post was about the simplicity of a plate that can give you just the right amount of satisfaction. Today I’m going to talk about the complete contrasting end of the spectrum, having those juice and versatile salads with a mixture of different yet complementing flavours.

white beans for me are a great ingredient to experiment with and get creative, they’re a nutritious basic food which has just the right amount of starchy-chewyiness one likes to enjoy for lunch but at the same time, it needs something more!

Ingredients:
1 cup cooked white beans
1/2 cup chopped pumpkin
40gr feta cheese
1 tbsp balsamic vinegar
2 tsp olive oil
1 chopped tomato
Handful lettuce (mixed greens)

The advantages of having such a range of ingredients in your salad is the didferent benefits you get from eqch one, as well as the perfect balances meal which includes healthy carbs, protein as well as those healthy fats and most importantly vegetables. It really is important to make sure you give your body a range of what it needs, always sticking to the same foods – no matter how healthy these are – can shockingly cause you to later realize you have been missing out on some vital vitamins and minerals. Comfort food gone healthy – ‘greened up’ pizza

Ah pizza! Whoever inveneted knows exactly the deepest and truest meaning of comfort for us peculiar human creatures, something chewy crsipy and full of different flavours. When it comes to food most of us are really indecisive and cant choose 1 topping or 1 flavour to our dish. Thats normal as it would taste quite bland and eventually be boring, who would want to eat a huge bowl of chicken with no herbs or sides for a week? (I think using chicken was a bad example – confessions of a chickenaholic!)

That being said, i constructed an easy and quick to make dinner, full of benifical ingredients that consequently give a different flavour to the pizza, it looks so lovely and colourful and the tortilla base was crispy on the edges and moist and chewy in the middle from the tomato sauce, you got the best of both worlds!

Ingredients:
1 whole wheat tortilla
2 mushrooms
1 tomato
1/4 zuchinni
1 olive
60gr low fat cheese of your choice (i used traditional cypriot anari cheese)
Basil leaves
Parsley leaves
Baby spinach leaves

Start off with the leaves as a base, then add the chopped mushrooms and tomato, grate your cheese on top and add the olives and zuchinni.

Place in oven for 25 minuets or until the cheese has melted to your preference. And bon-appetite!

Vegan vegetable icecream

I scream, you scream we all scream for an icecream. Theres no denying that icecream is one of the most fresh and delissh snacks we can enjoy in the summer and i 100% believe its only because of the cold feeling on our tongue when were sweating. So why not make icecream a much healthier version, apart from the froyo, which when you actually know there’s no extra sugar added is a great healthier option there’s still room for us to get even more creative.

Thats when my love for spinach smoothies and icecream collide.

Ladies and gentlemen i present to you the amazing “spinach and beet icecream” and man was it delicious AND nutritious – i guiltily admit that i had this for breakfast- yes…icecream for breakfast but so what?!

Ingredients:
2 cups raw spinach
6 icecubes
1/4 cup coconut water
1/4 cup beetroot juice
2 teaspoons maca powder
1 frozen banana
Cinnamon, cardamon and ginger

Blend the ingredients and keep in freezer for about 1 hour to get that creamy texture!

Coconut pumpkin and orange salad

Ahh soo many amazing flavours in one dish! This started out as me cutting some oranges to have as a snack before my dinner and then transformed into being my dinner because of too much inspiration around me.

This is exact proof why you should fill your fridge and cupboards with healthy foods that are good for you, you’ll just always know that they’re there and will come up with a new way to add them to your meals. This salad is a great way especially with summer approaching, to have a good meal to freshen you up and fill you with energy as well as secretly working inside of you a tonne of more goodness!

Ingredients:
1 cup shredded lettuce
1 chopped orange
1/4 cup chopped pumpkin
Handful raisins
Coconut flakes
Pumpkin seeds

That is all my friends, so simple yet so so so so devourable!

Ginger and orange salad.

I used to hate ginger. Yes. With all those benefits it comes with, i never used to put it in my mouth, and it was long due till it started becoming my daily routine. It does have quite a distinct taste and smell and so i started off gradually, adding a little at first to get used to the taste then all of a sudden loving the flavour i used to despise!

Ingredients:
Mixed lettuce
1/2 chopped orange
Almond flakes
Celery sticks – chopped
Ginger powder
Egg white
Chopped carrots
Chopped and peeled cucumbers.
Dressing: fresh lemon juice

This just reminds me of summer, I’m celebrating a little early, trying to get into that cheerful and energetic summer mood!

Snacking – the pandora’s box our generation has opened.

Snacking can only be described as an opening of a pandora’s box. Yes! Snacking really can be extremely beneficial for our bodies, it can aid in weight loss, it’s enjoyable and it can prevent us from feeling starving before any meals which usually leads to over eating, it’s the best medicine to boost our metabolism and keep our body working 24/7.

But there’s always another side to the story; of course. Snacking can lead you to over-eating, especially when eating straight from a bag, in front of the tv, suddenly you realize you’ve eaten double what your stomach can actually fit.

The best thing to do is to snack smart.
What does that mean exactly? Just a few steps of clever thinking

1. Plan ahead
Keep some chopped veggies, washed fruits in the fridge. A healthy diet starts from the supermarket if everything processed is vanished from your cupboards, you really wont have that voice nagging you to grab the packet of crisps you know is lying there.

2. High protein snacks – healthy carbs
Egg whites, low fat greek yogurt, oatmeal. These foods stay in your stomach for a long time. They keep you satisfied and they release energy slowly and gradually.

3. Don’t go for the empty caloric foods.
Pretzels, rice crackers and such crunchy snacks that may sometimes claim to be low in fat and calories are just a waste of space and energy. They have so little nutritional value, they will not nourish your body or provide it with the right vitamins and nutrients it needs to keep going, why. Ot have a fruit or veggie instead?

4. NEVER eat from a bag, that goes back to point 1, plan ahead, keep everything in portion sized bags and containers so you know EXACTLY what you’ll be having and how much!!

It really isn’t that hard, snacking can be the perfect opportunity to enjoy a greater variety of foods and to really have a well balanced diet, so make the best of this awesome phenomenon.

Yogurt coated raisins

I was really nervous that these were going to turn out to be a disaster and crush my dreams of a cute healthy snack, but they were absolutely delicious and so easy and quick to make, it’s almost too good to be true!

You can use the same idea with blueberries or almonds or even a mixture of raisins and nuts, just get creative and enjoy these small frozen treats.

Add a tablespoonful of low fat greek yogurt to a bowl and pour in the raisins, mix well. Then carefully remove each raisin leaving some yogurt around it and place on a flat dish apart from each other, keep in the freezer for two hours and they are ready before you know it!

Green tea ice cubes

These should be in the freezer of ANY healthy maniac like me! They are perfect for enjoying with your water with a few squeezes of fresh lemon juice. But they’re also the perfect ice cube base for all your morning fruit smoothies! Boosting your smoothie with extra taste as well as thickness and of course not forgetting the great antioxidants that come with it!

If anything is better than normal green tea, it has to be green tea ice cubes, there’s no more to be said so i’ll leave you to go and make some ice-cubes…

Fat burner snack

Yes you read that right! Snacking can help you loose weight, the only catch? Smart snacking! That is the key to ANY successful diet plan, not starving yourself but keeping your body full and happy with the best quality foods that it need.

Cayenne pepper is known for its magical fat burning powers and so whats better than some chopped carrots sprinkled with this extra spiciness to give it a little kick.

Thats the definition of simplicity being far from boring! Enjoy 🙂

Gorgonzola, red cabbage and strawberry salad

The colours in this salad are my proof that healthy eating just looks beautiful, i mean, who wouldn’t want to just devour that plate of goodness?
I don’t really put any seasoning in my salad mainly because it takes away from the fresh taste of the delicious veggies and fruits, i stick to just natural lemon juice to make it even fresher and give it that extra kick from the tangy taste.

Without further a-do, i present to you – what i call – the masterpiece of healthy eating.

Ingredients:
Lettuce
Red cabbage
Strawberries
Cucumber
Gorgonzola cheese
Crushed walnuts
Chopped dates

You get the sweetness, you get the crunch, what else can you honestly ask for?
