Tuna apple nutty salad

If there was a “most all rounded” salad competition, i think this one would win.
The, what may seem to be like a strange mixture of ingredients, really complement each other to make this salad be exactly what you need when you’re indecisive and in need of something that is also….everything.

Its a great quick recipe to prepare, especially since tuna is available nearly in everyone’s cupboards, for that urgent meal you must prepare but also enjoy.

I usually link tuna to thise boring meals, a normal tuna salad sandwhich with corn, or simple tuna with some toast and eggs. And while these are good healthy choices to introduce in your family, the trick with leading a healthy lifestyle is consistency, and consistency will not magically remain if you’re eating un-exciting meals. Food is naturally a factor contributing to kur enjoyment and something people find interesting, therefore, make it just that…INTERESTING!

Ingredients:
Sweet onions
100gr tuna
1/2 avocado
Shredded cabbage
Chopped lettuce
1 cucumber
Parsley
Chopped red apple
Lemon juice
Lemon zest
Chopped lemon pieces (if you want that extra tinge)
Cashew nuts
Olive oil

You know what i’m going to say next. A simple recipe calls for simple instructions:

MIX EVERYTHING TOGETHER. And wa-la! 🙂

Healthy Tuna Quiche

IMG-20130330-WA000 IMG-20130330-WA001Anything that has the word quiche in it makes me hungry instantly!

The reason i love these is they are so simple to just mix together, pop in the oven, and enjoy with friends and family.

They are also what you can call “finger foods” so you can easily include them in a menu for a cocktail party or as a snack prepared if your friends are coming over.

INGREDIENTS:

1 can of tuna

2 eggs

1 can of corn

mozzarella cheese

pepper

Mix the tuna and corn eggs and season with some black pepper. Place in small cupcake trays and add some grated mozzarella on top, place in oven for around 20 minuets.

Before you put them in the trays, spray with some olive oil so they don’t stick, I didn’t do that and all the edges were stuck. But, apart from that they really were a success!

Tomato and Tuna Pasta

It has been stamped in my head that tuna is a “cold” meal, i never have it warm or cooked, therefore i feel like i don’t really fancy it a lot during the winter especially!

So, I decided to try something completely different, Warm pasta and tuna, it was a completely new taste for me

INGREDIENTS:

1 cup whole wheat pasta

1 small chopped tomato

tomato sauce

1 garlic clove

1 can of tuna

Spray pan with some olive oil and put chopped garlic, add the tomato, tomato sauce and then add the boiled pasta and tuna, toss until warm and season with some black pepper!

Tuna Salad!

USE LOW FAT YOGURT INSTEAD OF MAYO!!

When i first read this i really was doubtful on the outcome, i didn’t know wether the yogurt was going to have the same effect and taste as the mayo, but i took the risk and i didn’t even notice the difference.

SO:

INGREDIENTS

Tuna

Yogurt

Corn

Cucumber

Pepper

Lettuce

Just a good old simple tuna-salad.

You can add a boiled egg if you want.

I was going to have a tuna-sandwich but the salad has no carbs, and so much less calories, and it keeps you just as full if not more! It takes you more time to eat therefore you feel like you’ve had a proper meal and not just a “sandwich”

Tuna and Avocado Rolls

Whenever you feel like you need to increase your carbs intake, or you notice that you’ve been having too much bread and rice? it’s not the end of the world. Just because you need to try and eat less rice or pasta doesn’t mean you can’t have a proper and satisfying lunch or dinner.

IMG_8708It’s lunch ideas like these that get me excited, you can easily eat, be satisfied and enjoy your food and not feel hungry after you’re done! in fact, i enjoy these lettuce rolls even more than having something maybe more unhealthy and filled with less nutrition!

All you need is:

some lettuce,

a can of tuna,

1/2 an avocado

lemon juice

 

just place everything on the lettuce and roll it up!
