Cabbage boat salad.

Red cabbage is my new favourite salad ingredient and not only because of the amazing bright colour it adds to the plate but also because of the hint of sweetness it has as well as the super crispiness of it.

This is a salad with a bit of a twist that can be used as a starter for dinner. Parties or simply if youre bored of mixing up a bunch of chopped vegetables every day in a bowl.

Cut the cabbage into little boat shaped wedges, and place on a plate. Spread with some low fat greek yogurt and Add a portion of chicken breast on top, add some chopped peppers (yellow and red) and some finely chopped lettuce. Season with cayenne pepper depending on how much you like your spice. (For me it makes the whole dish.)

I like the fact that you are still eating a salad with tonnes of vegetables but it feels more like a dish which can add a little bit of change to your diet style.

The image is using the same ingredients a little differently, each boat is one leaf of cabbage rather than a wedge which is another idea for this dish.

Raw mince pies!

Dare i call these a healthy version of mince pies that you can eat and enjoy and indulge in with no regrets even with your families who don’t believe in healthy eating? I do dare. That is exactly my experience with these amazing ‘mincepies’ not only did i fall in love with them but so did my mum – the ultimate mince pie lover who even asked for the recipe to make some for christmas dinner with the family – if nothing else i thimk that’s my ultimate proof that 1. You can enjoy christmas in a healthy way and 2. Go make these right now!!!

For ‘pastry’ layer:
1 cup walnuts
1 cup almonds
1 teaspoon almond butter
1 tablespoon carob
5 dates
Cinnamon
2 tablespoons oats

For filling:
1 apple chopped
Juice of 1/2 orange
Lots!!!! Of cinnamon
Raisins
Dates

Add the walnuts and almonds in food processor, then once turned to powder (or abit bigger) add the oats and cinnamon. Pulse. Add the carob and almond butter and dates and pulse until everything is well combined.

Place in some cupcake cases. Making sure they fit the shape you want.

Chop apples and dates into small pieces. Mix with the rest of the ingredients and place a tablespoonful of the mixture in each cup.

Refrigerate for about 2 hours before serving 🙂

Ultimate healthy Vegetable soup

another bowl of soup to celebrate another day passing till the christmas season comes, this may just be a new tradition forming its shape, a bowl of green soup a day to keep healthy and strong against the cold december weather.

Apart from the cosines you feel when you sit covered in a huge oversized hoodie watching home alone and enjoying your soup, it is also reallly yummm yum yum! Vegetables are literally the group of food we need to get the most of and they’re the only thing that keeps us full but not bloated, after having a lovely bowl of soup i don’t feel like i want to go have a nap.

Ingredients:
Broccoli
Celery
Cabbage
Spinach
Yellow peppers
Optional: some boiled chicken pieces.

Boil all the vegetables together adding more of the ones you specially love (broccoli!!)your favorite veggies and bon appetite!!!

Berry smoothie dessert

Its been more than i can remember since i last made a juice smoothie to energize me throughout the day; waking up quite late and being in a rush to go out made it the perfect day to get back to my old habit that i used to love! Good old smoothies 🙂

This was. Less a “drinking” smoothie and more something i can enjoy with a spoon as a dessert in the afternoon or after dinner as it satisfies that sweet tooth but also fills me with energy and good vitamins!

Ingredients:
2tbsp yogurt (greek non-fat)
1 cup frozen blueberries and cranberries
1 teaspoon organic honey
Coconut flakes (as much as you fancy)

Add all ingredients in the machine that saved all our lives (the blender!!) and enjoy however you want , wether watered down with some milk/water to drink or with some granola to eat as a parfait or on its own like i did 🙂

Personally i loved the thickness and richness of it, i can even imagine keeping it in the freezer for about an hour to enjoy ad the perfffect frozen yogurt!!

Dipping for more – sweet cottage cheese and almond dip

This sweet dip is the perfect complement to your afternoon or mid-morning fruit snack!

1 tablespoon low fat greek yogurt
2 tablespoons cottage cheese
Cinnamon sprinkles (i usually add a lot!!)
1 teaspoon Almond butter

Combine all the ingredients, this usually serves two with 2 sliced apples used as a dip 🙂 its a great thing to enjoy infront of the tv watching your favorite thing and crunching on these lovelies

Healthy and delicious Spinach tortilla Salmon wraps

These are my absolute favorite healthy meal i have ever done, i think I’m going to print this picture and stick it on my wall…or maybe not. 

I had something similar while i was on holiday and really wanted to re-create it adding my own special features and most importantly making it as easy as possible so that literally anyone can do it at home! 

I used spinach tortillas, they taste DELISH, and they are healthier, these were homemade and the recipe will be in my next post 🙂 

The wrap: 

Smoked Salmon 

one tablespoon light philadelphia cheese 

1/2 finely chopped cucmber in thin lines 

handful of spinach 

a few lettuce leaves 

 

all fresh and simple ingredients, roll it up and enjoy! Image

THE COLOR RUN- happiest 5k on the planet :)

It was my dream to be part of the color run and as excited as i was, counting down the days till the event, the experience was so much better than i had ever dreamed, i just wanted to stay there, covered in colored powder, loud music, and thousands of people jumping around me for the rest of the day!

If you live next to any city where a color run is taking place, YOU CANT MISS IT!

for those of you who don’t know, the color run is a 5k marathon, all proceeds go to cancer research, but unlike other marathons, hundreds of volunteers are throwing colored powder at you while you’re running and by the end of it, you and your friends are swimming in colors, up your nose, in your ears, down your clothes, i even tasted some in my mouth!

But while you’re there, you really don’t care, the main aim is to get even more colors and just have a laugh!

I was really encouraged to see so many people take part, it was the first color run in london and I’m sure there will be many more as it was such a great success!

This was my first real marathon and i’m sure i will participate in many more, not only is it great exercise, you can also encourage a lot of your friends to go for a good workout if you get a big group to go, but most importantly its always for a great cause!

HEALTHY PANCAKES FOR BREAKFAST? yes please!

Half the reason you enjoy pancakes is because of the spread and so, we can’t fully call it a pancake if it does’t come with either CHOCOLATE, or BUTTER, or SOMETHING SWEET.

and so, that’s exactly what we can STILL have and not feel bad about it.

 

PANCAKE:

1 egg

1 tablespoon milk

–> whisk the egg and milk together and put in a skillet on low-medium heat.

OPTIONAL: you can add a mashed banana to it, I didn’t and instead sprinkled a handful of raisins, it really didn’t need the bananas to sweeten it more, they were perfect!

SPREAD:

peanutbutter

Guys, this is actually delicious, and will not deprive you from anything, so, hope you enjoy it 🙂

It’s also a perfect excuse to have more eggs, especially for kids who love the idea of pancakes and hate the idea of eggs. Great cheeky way to trick them 😉

Homemade HEALTHY nutella!

IMG_9371IMG_9368Whoever of you who are still at school will know what i mean when I say, you get really happy when you realize someone else in your school is also a “healthaholic” and you’re not the only one who feels like you’re in a completely strange planet.

When i read the recipe and saw the pictures, i couldn’t wait another day to try it, and the results were even better than i expected! So, my advice is go do this like NOW! you won’t regret it, and you’ll NEVER ever crave nutella again! dvjgnbgwe.

INGREDIENTS:

2 cups raw hazelnuts (I made two the other recipe with walnuts and it tasted just as good)

1 1/2 tbsp pure vanilla extract

2 tablespoons cocoa powder

1 tbsp honey

1/2 cup skimmed milk

Put the nuts in a food processor and pulse for about 10 minuets until it becomes butter-like texture, add the cocoa powder, honey and vanilla and mix again, add the milk in, slowly while mixing it through and keep in the fridge!

you can enjoy it as a healthy breakfast with some toast, or a snack with some low fat whole wheat crackers. ABSOLUTELY DELICIOUS!

Exercise!

Thanks to edexcel, this coming week is a “study week” and i can finally have some time to relax and have a life again until the next half of my exams make their appearance (although thankfully, the stressful ones have gone)

 

With exams bombarding my timetable, and studying taking over every cell of my body, i really didn’t find time to exercise a lot, yes I did do the occasional 50 crunches or squats while reciting my biology notes but the thing i felt i’v neglected the most was jogging!

I have 11 free days before my exams start again and therefore i’m going to give myself a challenge of going jogging every morning. I wanted to share it with you all just so i can feel as if it’s now “official” and i have to do it!

I also wanted to remind you that even if you eat 100% clean, without exercise it will all be for nothing! Moreover, weights, sit-ups and push ups which will all build up great muscle will not help you in loosing fat. Cardio exercises are the secret for the fat to melt off your body, and that’s what i feel i’v been neglecting!

I can’t wait to see the difference at the end of these 2 weeks, but most of all i can’t wait till summer where i’ll be able to go and swim in the sea!

If you can’t find the motivation to go out and exercise, to it with a friend, motivate each other, set yourself aims and deadlines or simply download your favorite music on your i-pod and might find yourself jogging out the door in no time.

And remember, you don’t have to be the fastest, you’re always lapping ahead everyone still sitting on their sofas!
