Apple and chia nachos

So it’s lent which means a bunch of us decide to feel good about ourselves and give something we love up, wether its because of religious, moral or even personal reasons to prove to ones self that they in fact do have that so-called “will-power”

Having gone through this every year, given up milk, chocolate and even facebook in previous years i wanted a real challenge this year.

Living in Cyprus the 50 days of lent are celebrated(?) by the conventional fast – all the restaurants (yes, including McDonalds) introduce fasting menus including veggie burgers, fish and people’s diets suddenly transform into greener, veggie and fibre dense diets.

So, i decided to go with the conventional fast this year, mainly because of the constrictions it places on the individual – no meat or any dairy products. (Let me add a sidenote – i virtually live on yogurt…)Lucky for all of you, the next couple of weeks you will have the honour of following me in my journey of basically going vegan (having decided to give up seafood also)

So the first veganized dish which I enjoyed today as a breakfast and pre-workout snack is a fruit nacho dish with homemade chia drizzles.

Chia sauce:
2 tablespoons chia
4 tablespoons water (judge until right consistency)
Cinnamon
Ginger
1 teaspoon honey (not vegan!!)
1 teaspoon tahini (or any nut-butter of choice)

Mix all the ingredients together and drizzle over some thinly chopped apples and carrots.

AUTMEAL – the perfect oatmeal for the season

Another one of those oatmeal posts have made their appearance. Especially with the new wintery/autumn season.

I present to you the cinnamon-tangerine oatmeal.

It’s that mixture of smells that combines the strong aroma of the herbs as well as the tangerine which makes you want to snuggle up and count the days down for christmas.

Ingredients:
40g oats (i use a mixture of jumbo oats and barley)
1 grated carrot
Zest of tangerine
Tangerine (optional) for decoration.
3 walnuts chopped
Cinnamon
Nutmeg
3 chopped dates

Start by cooking your oats in water, and adding the carrots and orange zest and herbs. As water is absorbed, add the chopped dates and mix.

Pour in a bowl and top off with crushed walnuts and tangerine.

**instead of grating the tangerine zest; i finely chopped pieces, giving that extra chewiness just like candy. Exactly what you want to perfect your morning oatmeal.

Porridge is becoming surprisingly increasing in popularity as a breakfast option, its a very easy and quick breakfast which warms you up during that cold morning chill and i think thats why people love it, even if they’re not really thinking about their health.

Whenever I find people who do eat porridge – being me – i get over excited and start asking the for their creative ideas and recipes; being completely horrified every time at the amount of people who eat their porridge completely plain. Not enough people have been introduced to the endless world of porridge, out of all the ‘crazy’ ideas and strange looks i received, these were the most exciting oats idea which got all my friends eager for their next breakfast.

Ingredients:
40gr oats
Water
Grated carrot
Chopped pear/apple
Walnuts
cardamon, nutmeg, cinnamon
Raisins
Strained greek yogurt

Start off by cooking your oats with water, when theyre halfway ready (after around 2-4 minuets) add in the grated carrots and herbs and mix.

When ready, top off with the fresh fruit, raisins, chopped walnuts and some cold yogurt to act as your “frosting”

You have that sweet and full of spice oats contrasting the cold yogurt in every bite, if you really have that sweet tooth drizzle some extra honey 😉

Green egg pancakes

As weird as this sounds/looks and as surprised as my dad was when I was preparing this, the amount of mocking i was faced with only turned to absolute curiosity and amazement as my parents were astonished with the final result, all wanting to “taste it”

That is always a proud moment – to prove that my crazy healthy ideas actually form decent dishes! = success!

Ingredients:
1 cup raw spinach
2 eggs
1 cup grated zuchinni
Olive oil spray

Blend the spinach and eggs with either a smoothie blender or a soup maker. Mix in the grated zuchinni. Spray a non-stick pan with some olive oil and pour the mixture. (Makes 2 pancakes)

You can either enjoy with some low fat cottage cheese for a savory treat and some tomatoes and cucumber on the side. Or if you’re feeling like desert drizzle some honey and cinnamon with some chopped apple slices.

Super healthy – Sweet Honey and tahini toasties!

This combination of the one of the best sources of unsaturated fats is a great crispy breakfast idea for all those nut butters out there.

Tahini is sesame oil, with a very strong but delicious flavour, this means you need only small amounts in your meals to get a huge taste and really change your dish!

The reason i choose to use rye bread is because of its delicious taste, rather than the mild normal bread you get extra strong flavour in each bite, it also has a super amount of fiber, higher than any bread!! I would call it a superfood!

Two slices of rye bread – toasted
1 tablespoon greek yoghurt
2 teaspoons tahini
1 teaspoon honey
Cinammon (to taste) – my theory the more the better 😀

Mix the honey, cinnamon and tahini and add a hint of water if it need to smoothen the consistency, spread on your toast!

Turmeric boost

Turmeric is my new favourite herb which i will slowly start to happily use in all of my meals – as i do!

So leaving you with as little “scientific knowledge” which you can easily research online i will just include a brief list of why turmeric is a superfood which you should start to include in your diet:
1. Antibacterial
2.prevents cancer
3. Anti-inflammatory
4. Prevents Alzheimer’s
5. liver protecting

Being a herb, its very easy to store as well as use, all it takes is a few sprinkles here and there and a little bit of clever thinking when you’re trying to make your taste buds happy too 🙂 when were giving our bodies so much benefit, we should also enjoy the process, don’t make something you hate and drink just for the sake of its nutritious history, transform it into something which you’ll grow to crave!

Apart from the common use in curries, which i also used in my healthy vegan curry, i decided to add some turmeric to my morning green smoothie, to give me that boost from the start of the day and it really did add a wonderful flavour, not only is it giving me a different range of benefits but also a nice “twist” to my normal smoothie making it more exciting.

Ingredients:
1 orange
3 cups raw spinach
6 ice cubes
1/2 tbsp turmeric powder
1 tsp ginger powder

Blend blend blendoooo and it is readddddayy!!

Flourless pancake

That’s right! Its one of the most loved and common deserts and breakfasts, topped with the most sugary and processed syrups and creams, now taking a stand in the new health trend?

I always try to stay away from the egg yolk, but after some research, there are actually countless benifits in egg yolks which you can’t get simply from the white which i love because of its high protein content.

But you shouldn’t eliminate egg yolks completly, although in extensive amounts they do increase cholestrol, if this is not your main issue, then do enjoy this blissfull ingredient once in a while.

Ingredients:
1 egg
1/5 cup hazlenut milk (you can use other nut milk)
Cinnamon

Drizzle of organic carob syrup

Mix the ingredients and add on a non stick frying pan, cover the pan for a few minuets then flip.

Its thick, creamy and held so well in the pan! Really a magical combo!!

Minty zoats – healthy porridge idea

When you have mint under your hands and you smell the georgeous aroma it gives out as well as being aware of its wonderful soothing and antimicrobial properties, its such a big temptation to try and include it in nearly all my dishes.

And its porridge’s turn now, something so simple but so full of flavour, i finally found a flavour of porridge which doesnt need a million extra ingredients to make it exciting

Ingredients:
1/2 cup oats
1/2 cup grated zuchinni
Handfull chopped fresh mint

Cook in water and enjoy either warm or cold.

Optional: drizzle with a dollop of honey for you sweet sweet sweet toothers out there.

Chicken and egg whites are two of my favourate protein sources, not only do they taste great but they give you plenty of protein with little saturated fat.

Its important to include protein in all your meals as it is the only part of the meal which is responsible for keeping you satisfied for longer.

Omelets are genius, because you can literally add different toppings everyday and never get bored, especially when using egg whites only you can transform them to be both sweet or savoury, add different herbs and get creative.

Ingredients:
2 egg whites
1 teaspoon extra virgin olive oil
1/2 chicken breast
2 mushrooms
1 small tomato
1/4 cup shredded zucchini
Black pepper

I started off with 1 teaspoon extra virgin olive oil in a pan, then added some chopped mushrooms and tomato, with a hint of water, after mushrooms have become soft i added the shredded zucchini and topped it off with 2 egg whites. Leave on the stove for a few minuets covered and serve with some leftover chicken breast pieces.
