White bean healthy recipe idea!

Why do white beans have to take so long to cook?

if they didn’t, they might be my breakfast, lunch AND dinner!

There’s so much you can eat it with, different flavors, you can NEVER get bored!

this was the first time, i actually cooked them myself. My mum usually cooks them but not very often as its quite a hassle to keep them in water overnight then boil for about 2 hours or so. But, it was definitely worth it, and i may not go as far as having white beans for breakfast lunch and dinner, it will definitely be a more frequent part of my diet!

 

INGREDIENTS:

1 cup white beans

1/2 avocado

handfull spinach

lemon

2 crab sticks

 

Cook the white beans until they become soft, add the spinach until soft, mash the avocado and cut the crab sticks in small pieces, mix with the white beans and spinach and squeeze some lemon juice!

 

White beans, are loaded with antioxidants, fiber and protein. They have a low GI which means it prevents craving and feeling hungry after, and you don’t even need that much to fill you up completely!

Tuna and Avocado Rolls

Whenever you feel like you need to increase your carbs intake, or you notice that you’ve been having too much bread and rice? it’s not the end of the world. Just because you need to try and eat less rice or pasta doesn’t mean you can’t have a proper and satisfying lunch or dinner.

IMG_8708It’s lunch ideas like these that get me excited, you can easily eat, be satisfied and enjoy your food and not feel hungry after you’re done! in fact, i enjoy these lettuce rolls even more than having something maybe more unhealthy and filled with less nutrition!

All you need is:

some lettuce,

a can of tuna,

1/2 an avocado

lemon juice

 

just place everything on the lettuce and roll it up!

Avocado, spinach and parmesan toasties

IMG_8701The reason i like parmesan cheese is that because of it’s strong flavor you can always have it in moderation!

you need your protein from cheeses, but too much will also have the opposite effect because of the fat in them,

and so with parmesan cheese, you can have just the right amount and still be satisfied!

2 whole wheat loafs of bread

raw spinach

1/2 avocado

basil

parmesan cheese

just put everything on the loaf, and place in sandwich toaster till the cheese melts!

Healthy Avocado and Tomato brochettes

IMG_8700I am not eating this in public or in front of anyone.

You know those foods that you just love so much, and enjoy eating every single bite you just have a personal relationship with the food?

no? just me? well anyway,

this may be my favorite thing ever! and it’s healthy, simple, and a nice idea for a light lunch!

2 servings:

1/2 whole wheat french baguette

1 tablespoon pesto sauce (or just use some basil and garlic)

1 tomato

1/2 avocado.

Spread the pesto sauce on the baguette and add some cup up avocado and tomato on top, place in oven for about 10 minuets until the baguette is soft on the inside and crispy on the outside.

YUM. YUM. YUM!

Why have avocado for breakfast?

A crunchy piece of whole wheat toast for breakfast is the perfect way to start my day personally, but to add a little bit more nutrients to that breakfast you need to always think, what to put on your piece of toast?

Scratch the butter and jam from your list and change replace them with healthier and more nutritious choices.

These may still be high in calorie, but they have so much more benefit for your body. This may be peanut butter or other nut butters which I will post about another day, but also egg whites and avocado and different vegetables.

avocado:

research shows that people who have a high-fat breakfast will have an increased metabolism and are less likely to feel hungry for the rest of the day. Morning is the best time to get those healthy fats that you need.

It’s also rich in fiber, protein and antioxidants.

You can add avocado’s in your salads, smoothies or simply on a piece of toast.

Get creative and do what you prefer most, but remember, don’t overdo it, because too much of anything is always bad!

 

1 whole wheat loaf of bread

1/2 avocado pureed

1/2 tomato cut up in small peices

1 boiled egg white mashed

 

mix all together and spread on the loaf of bread. Personally, this is my favorite breakfast!
