Vegan vegetable icecream

I scream, you scream we all scream for an icecream. Theres no denying that icecream is one of the most fresh and delissh snacks we can enjoy in the summer and i 100% believe its only because of the cold feeling on our tongue when were sweating. So why not make icecream a much healthier version, apart from the froyo, which when you actually know there’s no extra sugar added is a great healthier option there’s still room for us to get even more creative.

Thats when my love for spinach smoothies and icecream collide.

Ladies and gentlemen i present to you the amazing “spinach and beet icecream” and man was it delicious AND nutritious – i guiltily admit that i had this for breakfast- yes…icecream for breakfast but so what?!

2 cups raw spinach
6 icecubes
1/4 cup coconut water
1/4 cup beetroot juice
2 teaspoons maca powder
1 frozen banana
Cinnamon, cardamon and ginger

Blend the ingredients and keep in freezer for about 1 hour to get that creamy texture!
