Cauliflower and spinach rice

On cold winter days sometimes you want to enjoy your chicken hot, with some form of carbohydrates accompanying it. Rice is usually the first choice people go for, mainly because its simple? Easy? They are merely used to it?

Why not change that to something a little less calorie dense and more vitamin dense for your body! Something that will still give you that rice starchy feeling but will also add extra flavour to your meal.

The answer is cauliflower!!!
All you need to do is boil the chopped heads for about 10 minuets. It takes less time to cook than rice and so if you’re in a rush or back home from school or work – starving, you wont have to wait long!

I added some spinach to boil with the cauliflower for extra nutrients as well as the amazing taste that spinach adds, and finally some balsamic vinegar.

this really was a much BETTER, HEALTHIER, and TASTIER, substitute to rice with your chicken 🙂
