Sweet potato, spinach cauliflower mountain

Yes! A huge packed overflowing plate of food doesn’t mean that it will make you gain weight, be unhealthy or cheat your diet.

This huge meal, kept you full and gave you the roght balance of all kind of food groups, because that’s what balance is about.

Ingredients:
Sweet potato (cooked in oven covered in foil for 1:30 hours)
Cauliflower
Celery
Quinoa
Spinach
Cayenne pepper
Black pepper
Cheddar cheese

Boil the cauliflower and celery for about 5 minuets then mix in the quinoa.
Cook spinach seperately.
Pile everything up and grate some cheese on top, you can go for low fat or even remove the cheese all together and drizzle some olive oil for a healthy fat alternative.
