lemon and coconut cookie-puffs

I really had no idea what to call these; this was meant to be a recipe for some lemony cookies but they turned out so soft just like bread or cupcakes.

I wasn’t going for the healthiest recipe as i was taking them to my friend’s house for a farewell party; but in the end i really couldn’t resist adding some of my healthiness into it and i was so happy with how they came out and how all my friends devoured them šŸ˜€


INGREDIENTS: (makes 15 big puffs)

1 cup all-purpose flour

1 cup low-fat greek yogurt

2 tablespoons lemon juice

lemon zest

2 tablespoons flakes/powdered coconut

1 teaspoon bicarbonate of soda

1 egg

2 tablespoons stevia/natural fruit fructose


add the flour, sugar and bicarbonate of soda in a bowl and mix.

Add the yogurt, egg, and lemon juice in a separate bowl until creamy and no lumps are lift and add it to the first mixture

Add the coconut and lemon zest.

place on a non-stick baking pan (i put messy balls of 1 tablespoon each) you can use an ice-cream scoop to make sure they are all evenly sized.

place in oven on 180degrees for 15 minuets.

i think i might make some more today they were just THAT good!!
