Healthy eggplant rings

These are really great for a party as finger food or even as appetizers if you’re having a dinner party with some friends; but having said that i did enjoy it as a main meal with a little bit of salad on the side. I think personally it’s probably my second nature to eat fruit and i never seem to ‘forget’ however with veggies sometimes i don’t seem to be eating as much as i should and vegetables are just as awesome as fruits if not better; they’re much lower in calories and glucose and each vegetable is very versatile and you can really come up with some great dishes!

INGREDIENTS:

1 eggplant/aubergine

slice of feta cheese

1 tomato

basil leaves (i didn’t have any and so used some parsley to add some flavor but i think basil would be nicer πŸ˜€ )

Chop the eggplant and tomato in rings, place a piece of tomato, little bit of feta and a few basil leaves on top of each eggplant ring;

i sprayed a baking pan with some olive oil spray but you can also use parchment paper; place in oven for about 20 minuets.
