Beetroot omelet

I wouldn’t say I’m the biggest fan of beetroot, but it’s only this week that I realized how such a strong flavor it had! And anything with a strong and different flavor; I will probably get a little bit obsessed about for a while and so, my love story with beet root was bound to take place sooner or later.

First of all.

What are the health benefits of beet root?

First of all beetroot contains POTASSIUM, IRON, and MAGNESIUM.

They reduce blood pressure, because it produces nitric acid that widens blood vessels so reducing the chances of a heart stroke too!

It’s a great source of antioxidants. and makes your muscles work harder!

Apart from cutting up some beetroots and devouring the plate in a millisecond, there’s so many different salads and sandwiches that you can add beet root to for maybe a more, civilized, way of eating them.

My main plan was to make a spinach and beetroot wrap with an poached egg.

But then i decided to just mix everything in the pan.

1 egg scrambled (you can remove egg yolk)

1 beet root cut up in small pieces

Handfull of chopped spinach

fresh lemon juice.

Add some water to your pan and throw in the egg, once it’s cooked add the spinach and then the beetroot.

I loved the way the eggs immediately got the lovely pink color from the beetroot, it almost looked like one of this things you see at only the fanciest restaurants.

Squeeze some lemon juice on top for a final touch. (it really made a big difference to the dish)
