Avocado and Broccoli spaghetti.

I must admit, I’v had a little obsession with avocado this week and decided to try making some healthy “green” pasta.


Why use whole grain pasta?

Whole wheat pasta ensures that most of the nutrients in the grain are still there, and although it doesn’t make a significant difference to your diet, the main thing you should control when eating pasta is QUANTITY, too much of anything is bad, and especially carbohydrates. So, to ensure that you’re still full and eating enough, add more veggies to your pasta. Broccoli or mushrooms, and make sure you eat slowly, even though it’s hard not to scoff down your plate of pasta in seconds (it’s THAT good)


1/2 avocado

1 tablespoon pesto

whole wheat spaghetti

1/2 broccoli head

handful of mushrooms


boil the spaghetti with the broccoli. Place in a pan and add the mashed avocado and pesto, mix well (i added a little water or you may add a little milk if it is too ‘stiff’)

and a dash of black pepper.
